Ingredients:

  • 1 pound fresh green beans, ends trimmed and snapped
  • 4 medium-sized potatoes, peeled and cubed
  • 4 slices of bacon, diced (optional)
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons butter

Instructions:

  1. If using bacon, cook it in a large skillet or Dutch oven over medium heat until crispy. Remove the cooked bacon from the skillet, leaving the rendered fat behind.

  2. In the same skillet with the bacon fat, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

  3. Add the green beans and potatoes to the skillet, along with the chicken or vegetable broth. If needed, add additional water to cover the vegetables.

  4. Season the mixture with salt, black pepper, smoked paprika (if desired), and red pepper flakes (if desired). Stir well to combine the flavors.

  5. Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Let it simmer for about 20-30 minutes, or until the potatoes and green beans are tender.

  6. Once the vegetables are cooked through, remove the lid and add the cooked bacon (if using) and butter to the skillet. Stir everything together until the butter is melted and the ingredients are well combined.

  7. Continue to cook for an additional 2-3 minutes, allowing the flavors to meld together.

  8. Taste and adjust the seasonings if needed.

  9. Serve the southern green beans and potatoes as a side dish alongside your favorite main course.

This recipe can be easily customized to your taste. You can add additional seasonings like garlic powder, onion powder, or dried herbs for more flavor. Some people also like to add a splash of vinegar or hot sauce for an extra kick. Enjoy!
